HastingsNow.com’s First "Local Exchange" – A Heartwarming Success in Cannon Falls, Minnesota

Nick’s Downtown Diner is a “cozy, hip hangout reminiscent of the diners and cafes from past” located in Cannon Falls, Minnesota.

Monday, January 13th, 2025, marked a historic day for HastingsNow.com with the launch of its inaugural "Local Exchange" program. This initiative is designed to bridge neighboring communities, fostering collaboration between local businesses and residents in and around Hastings, Minnesota. The first episode of the Local Exchange took place in the charming town of Cannon Falls, MN, and featured an exciting lineup of participants and moments that highlighted the essence of local pride.

The Power of Collaboration

Local business owner, Katie Sieben, who operates C-Beauty Organics, recently conducted an engaging interview with Chris, the owner of Nick’s Downtown Diner. During their conversation, she inquired about some of his establishment's most popular menu items and best sellers that keep the local patrons coming back for more.

The day began at Nick’s Downtown Diner, where HastingsNow.com’s founder, Ashley Slapnicher, and unofficial Emissary Squad members Wendi Johnson (owner of The Studio Downtown) and Katie Sieben (owner of C-Beauty Organics) joined forces to explore Cannon Falls. Despite the bitter Minnesota winter, their enthusiasm was palpable. Wendi arrived early, ready to dive into the experience, while Ashley, Mandy Bremer (owner of Mandy Bremer - Country Financial), and Katie brought additional energy and expertise to the mix.

Chris, owner of Nick’s Downtown Diner, graciously hosted the team for breakfast and shared his story during an in-depth interview. Chris detailed how his catering company, Cannon River Catering Company, and Nick’s Downtown Diner grew together from humble beginnings to thriving local institutions. He emphasized his commitment to sourcing local ingredients and his focus on personalized catering experiences—from intimate gatherings of 30 to massive events serving thousands.

Mandy Bremer: The Perfect Host

None of this would have been possible without Mandy Bremer. Mandy was the epitome of a gracious host, opening doors for HastingsNow.com by connecting them with a dozen local businesses. Her passion for Cannon Falls shone through as she described the town’s vibrant annual events, from chili and cinnamon roll collaborations to community programs that bring residents together.

Highlighting Local Businesses

HastingsNow.com was also fortunate to connect with The Grand O2 Event Center, a stunning event and wedding venue managed by Bria Ohmann. Although Bria couldn’t meet with the team in person due to prior engagements, she warmly expressed interest in the Local Exchange program and shared insights about upcoming events, including a Murder Mystery Dinner Theatre on January 25th, 2025. The Grand O2 Event Center’s dedication to creating memorable experiences for its guests makes it a valuable asset to the Cannon Falls community. More information about this beautiful venue can be found on their website at The Grand O2 Event Center.

A Community-Driven Success

The day was filled with memorable moments that underscored the potential of the Local Exchange program. Key highlights included:

  • Nick’s Local Impact: Chris shared stories about partnering with local suppliers like Ferndale Market to feature high-quality, free-range turkey in their menu. His commitment to collaboration extends to unique events like pairing cinnamon rolls with chili—a nostalgic favorite for Cannon Falls High School alumni.

  • Catering Excellence: From customizable menus to innovative take-and-bake options introduced during the pandemic, Nick’s Downtown Diner continues to innovate and adapt, keeping the community at its core.

  • Cannon Falls Charm: Mandy’s heartfelt tour of her office and stories about Cannon Falls showcased the rich history and close-knit fabric of the town. She even shared the playful idea of creating bobbleheads for herself and her sister, inspired by their father’s Hall of Fame bobblehead.
